Foodie: Chicken parmesan burgers

Lovers of Italian food probably enjoy chicken parmesan, but it may be surprising to hear that it can taste just as good between two buns in the form of a burger.

This recipe is a favorite during the week, as it is quick and easy but also healthy. It contains a number of ingredients readily available in the pantry, making it not too financially burdensome either.

In addition, it is a quick meal to put together, so is ideal after a long day at work, and can be a perfect thing to serve if hosting friends or family or if you need to bring food to a party.

There are sometimes few better feelings than kicking back in front of the television after a long day with a cold drink and two of these chicken parmesan burgers.

Ingredients

1 lb ground chicken
1 cup zucchini, shredded
1/3 cup panko breadcrumbs
1/4 cup grated parmesan cheese
1 tsp Italian seasoning 1/2 tsp garlic powder 1/4 tsp salt
1/4 tsp black pepper
Olive oil
4 tbsp marinara sauce
4 slices provolone cheese
4 burger buns, lightly toasted
Fresh spinach for garnish

Directions

With clean hands, mix the ground chicken, zucchini, breadcrumbs, parmesan, Italian seasoning, garlic powder, salt and pepper in a large bowl. Form into four patties.

Warm the olive oil in a large nonstick skillet over medium heat. Add patties and cook until browned on one side, about four to six minutes. Flip carefully.

Pour one tablespoon of marinara over each patty, then top with one slice of provolone apiece.

Cover the skillet and continue cooking until the patties are cooked through and the cheese is melted, about four to six minutes more.

Top with spinach and serve on buns.
