FOOD NOTES – 1789 Restaurant Taps Travis Olson as Pastry Chef

Clydes Restaurant Group is pleased to announce the appointment of Travis Olson as the new pastry chef for historic 1789 Restaurant (1226 36th Street, NW, in Georgetown).  Olson will artfully create all the fresh breads, pastry and seasonal desserts for the restaurant in the sun-filled pastry shop overlooking Prospect Street.   

A native Washingtonian, born in Arlington, Travis Olson realized his passion for pastries at age 12 while living in England.  Disliking the native cuisine, Olson picked up European cookbooks and began making clairs for family and friends. 

After returning to the Unites States, Olson enrolled in the University of Virginia, but decided to pursue his culinary interest and enrolled in the prestigious LAcademie de Cuisine in Gaithersburg, Maryland.  He graduated in 2001 and then spent nine months working as an assistant to award-winning Pastry Chef David Guas at DC Coast.

Prior to joining 1789 Restaurant, Olson worked at three popular restaurants under Clydes Restaurant Group umbrella from June 2003 to June 2008, including the historic Clydes of Georgetown; Clydes of Gallery Place and the newly opened Clydes of Willow Creek Farm in Virginia.  Olson is working with the newly appointed executive chef of 1789 Restaurant, Daniel Giusti, who took over the kitchen in June 2008.  His mission is to bring the best of traditional American desserts to 1789, incorporating the freshest seasonal fruit and the highest quality ingredients available.

1789 Restaurant is located at 1226 36th Street, NW, and offers complimentary valet parking along with dinner service nightly.  A pre-theater menu is available until 6:45 p.m. nightly as well as a post-theater menu after 9 p.m. on Sunday through Thursday, and after 10 p.m. on Friday and Saturday night.  The restaurant also offers private elegant dining rooms for special occasion gatherings.  For reservations please call (202) 965-1789.
