Discovering she couldnt eat gluten while in pastry school wasnt ideal for Emma Cech, but that didnt stop her from baking it informed her creations.
Cech will open The Happy Tart, a gluten-free patisserie, in Del Ray this October. Trained in food science, her kitchen has been a laboratory where shes perfected the taste of her French-inspired pastries for almost two years to make the missing gluten a non-issue.
The choices that are out there for people that cant eat gluten are very few, Cech said. I really like to eat, and I really like to eat good food, and the pastries reflects that.
The Happy Tart will open at 2307A Mt. Vernon Ave. in mid to late October, Cech said.
